We have a growing range of bottle conditioned real ales with the emphasis on balance, subtlety and flavour. All are made using local East Lothian base malts and are unfiltered and unpasteurised so as to retain all the complexity and flavour you would expect from a real ale.
SLOW BEER, SLOW BREWED
Our beers are craft brewed and bottle conditioned in a traditional style using the best, freshest and where possible local ingredients. This all takes time but we think the results are worth it. We like to call ours – “slow beer”: carefully considered, brewed, conditioned and bottled for your enjoyment.
ALWAYS FRESH, LOCAL WHERE POSSIBLE
It is important to us that we are able to source our main ingredients locally. Our base malts are all produced within 12 miles of the brewery by our friends at Mungoswells in East Lothian. It is very re-assuring knowing where our malt is grown and the passion and attention to detail that goes into its production.
BALANCE AND SUBTLETY
Our beer is always brewed with flavour as the first priority. All our beers are unfined and vegan friendly. They are conditioned to allow the yeast to work its magic. This adds complexity and depth of flavour as well as natural carbonation. Best practice is to pour gently into a glass when serving.
We are always trying to lower our energy requirement, waste and impact on the environment. The brewery has no heating, our spent grains go to local farmers and our pallets are shared with our grain supplier. Sadly the gorgeous bike above was not for sale and can’t be used for delivering casks anytime soon!
